A U.S. microbiologist, Nicholas Aitcher, posted a video testing bacterial growth on takeout pizza slices right after delivery and again after a day at room temperature. Cheese pizza showed a clear rise in bacteria after one day, confirming the risks of leaving food out. Surprisingly, fresh pepperoni slices had more bacteria than expected, while pepperoni left a day had fewer bacteria than the fresh pieces. Experts suggest pepperoni’s high fat might favor bacterial growth, but its salting (염장, a preservation process using salt) could inhibit some bacteria over time.
