Mirazur, the three-Michelin-star restaurant in Menton, France, led by Argentinian-Italian chef Mauro Colagreco, structures its menu and dining experience around the life cycle of plants: Root → Leaf → Flower → Fruit. The restaurant grows many ingredients on its own hillside farm (about 49,587 m²) with roughly 1,500 varieties, and guests begin their meal by tasting fresh leaves guided by a farmer to learn the “voice of nature.” Each themed day features a nine-course menu that changes with the seasons; on “Leaf” day, plates are dominated by different green leaves with distinct aromas and flavors. Mirazur’s approach extends beyond the kitchen: it sources over 70% of ingredients locally, supports a network of gardeners, fishers, bakers and artisans, and has helped regenerate Menton’s local economy through new food ventures — what Colagreco calls the “Mirazur universe.” (Menton: a French coastal town) (Mirazur: the restaurant’s name)
