To remove smells without damaging the wood, experts recommend natural cleaners: lemon, salt, and oil. For light stains and odors, rub a halved lemon with baking soda over the surface; for stronger odors, use coarse salt to gently scrub (the salt acts as a mild abrasive without harming the grain). Rinse, dry thoroughly with a towel, then apply a thin layer of mineral oil to restore moisture balance and form a protective finish. Preventive care is crucial: avoid soaking or dishwashers, dry boards immediately (store standing upright for airflow), wipe off food residue right away, and consider placing parchment (or baking) paper on boards when serving oily or wet foods to reduce absorption. Note that prolonged exposure to lemon juice can damage wood fibers, so always rinse any acidic treatment off and dry fully.
