Why Kopi Luwak (Civet Coffee) Commands High PricesCreatrip Team

Researchers found that Kopi Luwak (coffee beans eaten and excreted by the Asian palm civet, 사향고양이) contains about 40% more fat and much higher levels (6–10×) of certain fatty acid methyl esters that contribute to milky, buttery aromas compared with traditionally harvested robusta beans. The team collected 68 civet-processed beans from wild civets at five farms in Karnataka, India, and analyzed unroasted, ground samples by gas chromatography–mass spectrometry to preserve heat-sensitive compounds. They conclude that fermentation in the civet’s digestive tract likely alters bean chemistry and enhances aroma and flavor, helping explain why Kopi Luwak can sell for over $1,000 per kilogram and single cups may cost around 50,000 won.
