The beeswax-aged pork belly is a special menu item that is prepared upon request and requires prior reservation. If you want to order this menu, please make sure to mention it in your reservation details. 

Due to the beeswax-aged pork belly being a custom order menu, cancellation is not possible once ordered.

The minimum order is for 2 people.

Our Visit

Today I visited Wolhwa Sikdang in Mapo. It is a quality Korean BBQ restaurant that provides award-winning Korean beef from the Korea Livestock Quality Competition.

Operating at 2 floors, Wolhwa Sikdang has a clean exterior in beige tones.

Interior feels clean and sophisticated, not like a barbecue restaurant.

There is a special low-temperature aging room that ages meat specially. 

You can see awards from nationwide livestock quality competitions and patent certificates for pork aging methods. Wolhwa Sikdang offers special quality-proven meat, also recognized by Blue Ribbon Survey, the best restaurant guidebook in Korea!

There were many actors, idols, and athletes' autographs at the entrance.

The interior of the second floor has large windows that make it feel spacious and not stuffy! 

On the second floor, you can see the aging room of Wolhwa Sikdang's representative menu, the beeswax-aged pork belly. In the red light maturation room, there is pork belly being dry-aged for 7 days, while in another maturation room, there is pork belly being aged in natural beeswax for 14 days. This is amazing that you can see the aging process of wax-aged pork belly!

Wolhwa Sikdang makes authentic sesame oil with low-temperature pressing method for healthy and rich flavor. Also, we were serveed a basic salt seasoning with Andes salt, Himalayan pink salt, flavorful black peppercorns, and rosemary to enhance the taste of the meat. 

Basic side dishes include bean sprout salad, cabbage kimchi, green onion kimchi, fernbrake, and lettuce wraps. Wolhwa Sikdang operates an eco-farm to grow ingredients directly and make side dishes that you can trust and eat.

Minari

They currently added minari on the menu as a seasonal ingredient. They say the seasonal ingredients change every month. When you eat minari and meat together, you can feel the refreshing and crisp flavor.

You can also get free grilled cheese if you make a reservation through Creatrip. When cooked with meat, it's really delicious!

Beeswax-aged pork belly

Beeswax-aged pork belly is aged in two steps, first dry-aged and then aged with natural wax. Be sure to make a reservation in advance, as it is prepared upon request!

The staff brings aged pork belly and starts preparing it in front of you. Stiff and thick layers of wax are slowly peeling off, revealing the deliciously aged pork belly.

When the wax removal is complete, they sprinkle the wax powder on the meat. Shall we start grilling now?

Wolhwa Sikdang is really comfortable as the staff grills the meat for you very nicely. It looks really thick and the meat texture seems chewy!

The front and back are both deliciously grilled and added to hot spot plate with side dishes and minari. This is the charm of the hot pot meat plate, where meat, various vegetables, and side dishes are grilled and eaten together!

The staff also cut it beautifully into a good bite-sized portion. The smell of side dishes and vegetables being cooked together raises your appetite!

Salt seasoning and sesame oil are mixed in the right proportion to make oil dressing. Now that all the preparations have been completed, it is time to dig in!

The meat is well aged, with no peculiar smell and a very deep flavor. Together with the nutty oil sauce, the taste of the meat is upgraded even more.

Minari and squid salad

The fragrant scent of the minari was so good that I also ordered the minari and squid salad. Even alone, it's delicious, but it seems to be more refreshing when eaten with meat, and it seems to control the greasiness of the meat.

Black pork kimchi stew

And of course, we can't forget to include stew when eating meat, right? We've ordered black pork kimchi stew which is full of black pork meat, it's the taste of kimchi stew where you can feel the deep broth.

When eating meat in Korea, you must try 'Ssam'. Place a few pieces of meat on top of the lettuce vegetables, add kimchi or side dishes that were grilled together according to your preference, wrap it all up and eat together! Wrapping enhances the taste and aroma of meat and various ingredients, making it even more flavorful.

Truffle and beef tartare

We've also ordered another popular menu, hand-chopped beef tartare with truffle mushrooms and sesame oil.  The savory taste of tender beef brisket and chewy texture were unique. If you like yukhoe, I strongly recommend trying it!

If you make a reservation through creatrip you can also get free grilled cheese. Melted cheese and meat combination is definitely a must try!

If you bake cheese like a scorched rice, it's even more delicious!

Basic Korean barbecue is good, but if you want to try a new Korean barbecue, we highly recommend Wolhwa Sikdang Mapo!
